Ingredients
- 1/4 vanilla bean
- 2.50 egg yolks (from pasteurized eggs recommended)
- 6 tablespoons superfine sugar
- 1/4 cup heavy whipping cream
- 3 tablespoons sweetened condensed milk
- 1/4 cup light rum
Instructions
- Split the vanilla bean and scrape out the seeds. Discard the outer bean.
- In a stand mixer, whisk together egg yolks, vanilla seeds, and sugar on high speed for about 10 minutes.
- Slowly add the cream and condensed milk, and continue to beat for 7 minutes.
- Gradually incorporate the rum and beat for an additional 3 minutes.
- Pour the egg liqueur into decorative bottles or containers, seal tightly, and refrigerate for up to 3 weeks.
