Ingredients

  • 1/4 vanilla bean
  • 2.50 egg yolks (from pasteurized eggs recommended)
  • 6 tablespoons superfine sugar
  • 1/4 cup heavy whipping cream
  • 3 tablespoons sweetened condensed milk
  • 1/4 cup light rum

Instructions

  1. Split the vanilla bean and scrape out the seeds. Discard the outer bean.
  2. In a stand mixer, whisk together egg yolks, vanilla seeds, and sugar on high speed for about 10 minutes.
  3. Slowly add the cream and condensed milk, and continue to beat for 7 minutes.
  4. Gradually incorporate the rum and beat for an additional 3 minutes.
  5. Pour the egg liqueur into decorative bottles or containers, seal tightly, and refrigerate for up to 3 weeks.
