Ingredients

  • 1/4 cup raw cashews
  • 1 3/4 cups oat milk
  • 1 1/2 tbsp maple syrup
  • 1/4 tsp ground nutmeg
  • 1/2-1 tsp ground cinnamon
  • Pinch of vanilla powder
  • Pinch of ground cloves
  • 2 tbsp non-alcoholic rum (optional)

Instructions

  1. In a small bowl, cover the cashews with boiling water and let them soak for 20 minutes.
  2. Add the soaked cashews and all ingredients, except the non-alcoholic rum, to a high-speed blender. Blend on high for about 5 minutes until the cashews are fully incorporated.
  3. Use a fine mesh or nut-milk bag to strain the nut pulp from the smooth and creamy eggnog.
  4. Optionally, stir in the non-alcoholic rum.
  5. Serve hot or cold, with a sprinkle of cinnamon on top, or refrigerate for up to a week.
