Cranberry Vanilla Fizz

A sparkling and festive bellini made with a blend of cranberries, vanilla, and chilled prosecco, garnished with rosemary and fresh cranberries for a touch of holiday elegance.

  • 3/4 cup fresh cranberries
  • 1/2 cup water
  • Seeds from 1/2 vanilla bean
  • 2 1/2 teaspoons raw sugar
  • Chilled Prosecco
  • Rosemary and fresh cranberries for garnish


  1. Combine water, sugar, cranberries, and vanilla bean in a pot and heat over medium until the cranberries break down (about 5 minutes).
  2. Use an immersion blender or regular blender to puree the hot cranberries until smooth.
  3. Pour the pureed mixture through a sieve to remove the pulp and allow it to cool.
  4. Once cooled, pour the cranberry vanilla mixture into the bottom of a champagne coupe (about 1/4 of the way full).
  5. Top with prosecco, then gently stir to combine.
  6. Garnish with rosemary and cranberries.
  7. Serve immediately. Cheers!
