Ingredients
- 1/4 cup whole milk
- 2 tablespoons heavy whipping cream
- 1/4 cinnamon stick
- 1/4 vanilla bean pod (split)
- 1/8 teaspoon ground nutmeg
- Pinch of salt
- 1 large egg yolk
- 1 tablespoon granulated sugar
- 1/2 - 1 1/2 ounces rum, brandy, or bourbon (optional)
- Ground nutmeg (for garnish)
Instructions
- In a saucepan over medium-high heat, combine the cream, milk, cinnamon stick, split vanilla pod, nutmeg, and salt. Stir occasionally until the mixture reaches a boil, then remove from heat and let it steep while you prepare the eggs.
- In a bowl, beat the egg yolk and sugar together until light and creamy.
- Slowly whisk some of the hot milk into the egg mixture to temper, then repeat with the remaining milk until smooth.
- Pour the mixture back into the saucepan and whisk constantly until it thickens to your liking (or until it reaches about 160 degrees F on a thermometer).
- Remove from heat and allow to cool to room temperature, then stir in the liquor, if using.
- Pour the eggnog into a glass and refrigerate 2 hours until chilled, or overnight, and serve with a sprinkle of nutmeg.
