  • 1/2 cup heavy cream
  • 1 cup milk
  • 3/4 tsp freshly grated nutmeg
  • Pinch of salt
  • 1/8 tsp vanilla extract
  • Dash of rum extract (optional)

Instructions

  1. Whisk together the egg yolks and sugar in a bowl until light and creamy.
  2. In a saucepan, heat the cream, milk, nutmeg, and salt until it reaches a bare simmer, stirring regularly.
  3. Slowly add a small amount of the hot milk mixture to the egg mixture, whisking vigorously to temper the eggs.
  4. Gradually incorporate the remaining hot milk into the eggs, ensuring a well-combined mixture.
  5. Return the tempered egg mixture to the saucepan and cook over low heat, stirring constantly until it reaches 160 degrees F on a thermometer.
  6. Remove from the heat and stir in the vanilla and rum extract, if using.
