Ingredients

  • 1/2 cup full-fat canned coconut milk
  • 1 egg yolk
  • 1 tablespoon maple syrup
  • 1/4 teaspoon grated nutmeg
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2-1 tablespoon bourbon (optional)

Instructions

  1. In a blender, blend the egg yolk and maple syrup until light and creamy.
  2. In a saucepan, combine the coconut milk, nutmeg, and cinnamon, and heat until simmering.
  3. Slowly pour the hot coconut milk into the egg mixture while blending on low speed.
  4. Return the mixture to the saucepan and heat, stirring constantly, until thickened.
  5. Remove from heat, stir in the vanilla extract and optional bourbon.
  6. Allow to cool, then refrigerate until chilled.
