Ingredients

  • 6 oz. coconut milk
  • 3 oz. evaporated milk
  • 2 cinnamon sticks
  • 2 eggs
  • 2 oz. sweetened condensed milk
  • 1.50 oz. white rum
  • 1/2 tsp. vanilla extract

Instructions

  1. In a saucepan, combine coconut milk, evaporated milk, and cinnamon sticks. Bring to a simmer over medium-low heat.
  2. In a separate bowl, beat egg yolks with sweetened condensed milk until thick and pale yellow.
  3. Gradually whisk in half of the hot milk mixture into the egg yolk mixture. Then pour the mixture back into the saucepan.
  4. Cook and stir constantly for 5 to 8 minutes until the mixture thickens and coats the back of a spoon.
  5. Remove from heat, strain the mixture through a sieve to remove the cinnamon sticks, and allow it to cool completely.
  6. Stir in rum and vanilla extract. Cover and chill in the refrigerator for at least 6 to 8 hours, or up to 3 to 5 days.
  7. Pour into small glasses to serve and garnish with toasted coconut and a sprinkle of cinnamon.
