Ingredients

  • 1/4 cup raisins
  • 1 oz gold rum
  • 1/2 cup coconut cream
  • 1/2 cup coconut milk
  • 1/2 cup evaporated milk
  • 1/2 cup condensed milk
  • 1 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 1/8 tsp freshly ground nutmeg

Instructions

  1. In a small dish, soak the raisins in just enough rum to cover, for at least 10 minutes.
  2. In a blender, combine the coconut cream, coconut milk, evaporated milk, condensed milk, cinnamon, vanilla extract, nutmeg, and the soaked raisins (including the rum).
  3. Blend until the mixture is smooth and the raisins are fully incorporated.
  4. Pour the mixture into a pitcher or large glass container and chill for at least 1 hour.
  5. Serve the Coquito cold by itself, or add a splash of rum to your liking.
