Ingredients
- 1/4 cup raisins
- 1 oz gold rum
- 1/2 cup coconut cream
- 1/2 cup coconut milk
- 1/2 cup evaporated milk
- 1/2 cup condensed milk
- 1 tsp ground cinnamon
- 1/4 tsp pure vanilla extract
- 1/8 tsp freshly ground nutmeg
Instructions
- In a small dish, soak the raisins in just enough rum to cover, for at least 10 minutes.
- In a blender, combine the coconut cream, coconut milk, evaporated milk, condensed milk, cinnamon, vanilla extract, nutmeg, and the soaked raisins (including the rum).
- Blend until the mixture is smooth and the raisins are fully incorporated.
- Pour the mixture into a pitcher or large glass container and chill for at least 1 hour.
- Serve the Coquito cold by itself, or add a splash of rum to your liking.
