Ingredients
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 stick cinnamon
- 1/2 vanilla bean, split lengthwise
- 2 eggs, separated, at room temperature
- 3 tablespoons white sugar
- 2 tablespoons rum
- 1 tablespoon brandy
- A pinch of nutmeg (for garnish)
Instructions
- In a medium saucepan, combine milk, cream, cinnamon, and vanilla. Heat gently over medium heat, stirring occasionally, and avoid boiling.
- In the bowl of a stand mixer, beat egg yolks on high speed until doubled in size. Then, gradually pour one third of the hot milk mixture over the eggs, ensuring no vanilla or cinnamon falls into the mixer.
- Pour the egg mixture back into the pot with the remaining milk and spices. Cook gently on the stove, whisking constantly until the temperature reaches 176°F, then strain the mixture into a jug and refrigerate for 2-3 hours to cool completely.
- In a small pot, heat sugar and water until it reaches 230°F on a candy thermometer.
- In a clean stand mixer, beat egg whites until soft peaks form, then gradually pour in the hot sugar syrup while continuing to beat the egg whites until stiff peaks form. Mix the egg whites into the chilled eggnog, followed by the rum and brandy. Refrigerate again.
- Before serving, whisk the eggnog, pour into glasses, and garnish with nutmeg.
