Chilled Orchard Bliss
A refreshing slushie cocktail made with grilled nectarines, mint, rum, and orgeat syrup.
Ingredients
- 1 yellow nectarine (or peach), halved, stone removed
- 4-5 fresh mint leaves
- 2 tablespoons sugar
- 1/2 teaspoon citric acid
- 2 oz rum
- 1/3 oz orgeat syrup
Instructions
- Grill the nectarine halves until lightly charred, then let them cool.
- Blanch half of the mint leaves in boiling water for 10 seconds, then rinse under cold water.
- Blend the sugar and citric acid with 1 cup of hot water until dissolved. Add the nectarines and blanched mint, then blend until smooth.
- Pour the mixture into an ice cube tray and freeze overnight.
- In a blender, combine half of the rum, half of the orgeat syrup, and half of the nectarine ice cubes. Blend until smooth, then pour into a glass. Repeat with the remaining ingredients for the second serving. Garnish with mint sprigs and serve immediately.
