Ingredients

  • 1 yellow nectarine (or peach), halved, stone removed
  • 4-5 fresh mint leaves
  • 2 tablespoons sugar
  • 1/2 teaspoon citric acid
  • 2 oz rum
  • 1/3 oz orgeat syrup

Instructions

  1. Grill the nectarine halves until lightly charred, then let them cool.
  2. Blanch half of the mint leaves in boiling water for 10 seconds, then rinse under cold water.
  3. Blend the sugar and citric acid with 1 cup of hot water until dissolved. Add the nectarines and blanched mint, then blend until smooth.
  4. Pour the mixture into an ice cube tray and freeze overnight.
  5. In a blender, combine half of the rum, half of the orgeat syrup, and half of the nectarine ice cubes. Blend until smooth, then pour into a glass. Repeat with the remaining ingredients for the second serving. Garnish with mint sprigs and serve immediately.
