Ingredients

  • 2 3/4 cups cornflakes
  • 3 cups whole milk
  • 3/4 cup heavy cream
  • 2 tablespoons packed light brown sugar
  • 1/4 teaspoon kosher salt
  • 3 oz. cereal-infused milk
  • 1 oz. bourbon
  • 2 teaspoons confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • Grated nutmeg, for garnish

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. Spread the cornflakes on the prepared baking sheet and bake for 15 minutes until lightly toasted.
  3. Let the cornflakes cool completely, then transfer them to a large pitcher.
  4. Whisk together the whole milk and heavy cream, then pour the mixture over the cornflakes in the pitcher, stirring to combine. Let it steep for 20 minutes at room temperature.
  5. Strain the cereal-milk mixture through a fine mesh strainer into a large bowl, pressing gently to extract as much milk as possible, and discard the cornflakes.
