Ingredients

  • 1/2 cup white rum
  • 1 cup sweetened condensed milk
  • 1 1/4 cups evaporated milk
  • 1/2 cup coconut milk
  • A few drops of vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (freshly grated)
  • Zest of half a lime

Instructions

  1. In a large bowl, mix the coconut milk and rum, cover, and let it steep at room temperature for 2 hours.
  2. In a large, heavy-bottomed saucepan, combine the evaporated milk, cinnamon, nutmeg, and lime zest.
  3. Infuse the mixture over low heat for 20 minutes, ensuring it never reaches a boil.
  4. Remove the pan from the heat and stir in the mixture of rum-infused coconut milk, then add the vanilla extract. Gradually pour in the sweetened condensed milk while whisking continuously.
  5. Allow the mixture to stand for at least 4 hours in a dark, cool place to let the flavors meld.
  6. Strain the mixture through a fine sieve and serve well-chilled, with or without crushed ice.
