Ingredients

  • 1.50 oz Caramilk chocolate
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 4 egg yolks
  • 0.18 oz vanilla extract
  • 2 tbsp granulated sugar
  • 2 tbsp spiced rum
  • Ground nutmeg, for garnish

Instructions

  1. Use a vegetable peeler to create 1 tbsp of Caramilk chocolate shavings. Finely chop the remaining chocolate.
  2. In a saucepan over low heat, combine the chopped chocolate, cream, and milk. Stir until the chocolate has melted and the mixture is hot but not boiling. Remove from heat.
  3. In a large bowl, whisk together the egg yolks, vanilla, and sugar until the mixture becomes pale and thick.
  4. Gradually whisk in the hot cream mixture. Return the combined mixture to the saucepan over medium-low heat.
  5. Stir constantly for 8-10 minutes until the mixture thickens slightly and coats the back of a spoon. Be careful not to let it boil.
  6. Stir in the spiced rum.
  7. Pour the mixture into a heatproof serving glass and top with extra cream.
  8. Sprinkle with the chocolate shavings and a dash of ground nutmeg.
