Ingredients

  • 1 cup calamansi juice (or 3/4 cup lemon juice and 1/4 cup orange juice)
  • 1 cup sugar
  • 1/3 cup water
  • 2 oz club soda
  • 1 oz gin
  • Candied lime or lemon for garnish

Instructions

  1. In a small saucepan over medium-low heat, combine calamansi juice (or lemon juice and orange juice), sugar, and water. Bring to a simmer and cook, stirring occasionally, for 5 minutes.
  2. Remove the syrup from heat and let it cool. Once cooled, transfer it to a lidded jar and refrigerate until chilled, approximately 30 minutes and up to 1 week.
  3. Fill a low-ball glass with ice.
  4. Add 2 ounces of calamansi syrup, club soda, and gin to the glass. Stir gently.
  5. Garnish with candied lime or lemon, if desired.
