Ingredients
- 2 oz Champagne or sparkling wine
- 2 tsp granulated sugar
- 1/4 packet (.06 oz.) powdered gelatin
- 1/4 cup pomegranate bursting boba
- 2 tbsp heavy whipping cream
- 1/2 tbsp white nonpareils
- Edible gold stars
- 1 sprig of rosemary
Instructions
- Combine the champagne and sugar in a saucepan. In a separate bowl, sprinkle the powdered gelatin over a small amount of champagne and let it set.
- Gently heat the champagne and sugar mixture, stirring constantly until the sugar dissolves. Do not bring to a boil. Add the bloomed gelatin and stir until melted. Let the mixture cool until barely warm.
- Drain the boba and place them in shot glasses. Carefully pour the champagne mixture over the boba, then refrigerate until set.
- Beat the heavy cream until soft peaks form. Pipe the whipped cream on top of the set jelly, and sprinkle with nonpareils and gold stars. Refrigerate until ready to serve.
- Garnish with a sprig of rosemary just before serving.
