Ingredients

  • 2 oz Champagne or sparkling wine
  • 2 tsp granulated sugar
  • 1/4 packet (.06 oz.) powdered gelatin
  • 1/4 cup pomegranate bursting boba
  • 2 tbsp heavy whipping cream
  • 1/2 tbsp white nonpareils
  • Edible gold stars
  • 1 sprig of rosemary

Instructions

  1. Combine the champagne and sugar in a saucepan. In a separate bowl, sprinkle the powdered gelatin over a small amount of champagne and let it set.
  2. Gently heat the champagne and sugar mixture, stirring constantly until the sugar dissolves. Do not bring to a boil. Add the bloomed gelatin and stir until melted. Let the mixture cool until barely warm.
  3. Drain the boba and place them in shot glasses. Carefully pour the champagne mixture over the boba, then refrigerate until set.
  4. Beat the heavy cream until soft peaks form. Pipe the whipped cream on top of the set jelly, and sprinkle with nonpareils and gold stars. Refrigerate until ready to serve.
  5. Garnish with a sprig of rosemary just before serving.
