Ingredients
- 1.50 oz good quality tequila
- 1.50 ruby red grapefruits
- 1/4 cup brown sugar
- 2 tablespoons white sugar
- 2 tablespoons fresh lime juice
- 1/2 tablespoon agave nectar
- Splash sparkling water (optional)
- Coarse salt and rosemary for rim garnish
Instructions
- Preheat the oven broiler.
- Slice one of the grapefruits in half and the other half into 1/2 inch slices, then cut the slices in half to create wedges. Place all the grapefruit on a baking sheet.
- In a small bowl, mix the brown sugar and white sugar. Sprinkle the sugar mixture liberally over the grapefruit halves and slices.
- Place the baking sheet under the broiler for 8-10 minutes or until the grapefruit is toasted and caramelized.
- Remove from the oven and set aside the sliced grapefruit wedges for garnish. Squeeze the grapefruit halves into a cocktail shaker to extract the juice, which should measure about one cup.
- Add the lime juice, agave nectar, and tequila to the shaker. Then add ice and shake until well combined.
- On a small plate, combine coarse sea salt with dried rosemary. Moisten the rim of a glass and dip it in the salt mixture.
- Pour the margarita over ice and garnish with the broiled grapefruit wedges. Add a splash of sparkling water if desired.
