Ingredients

  • 1.50 oz good quality tequila
  • 1.50 ruby red grapefruits
  • 1/4 cup brown sugar
  • 2 tablespoons white sugar
  • 2 tablespoons fresh lime juice
  • 1/2 tablespoon agave nectar
  • Splash sparkling water (optional)
  • Coarse salt and rosemary for rim garnish

Instructions

  1. Preheat the oven broiler.
  2. Slice one of the grapefruits in half and the other half into 1/2 inch slices, then cut the slices in half to create wedges. Place all the grapefruit on a baking sheet.
  3. In a small bowl, mix the brown sugar and white sugar. Sprinkle the sugar mixture liberally over the grapefruit halves and slices.
  4. Place the baking sheet under the broiler for 8-10 minutes or until the grapefruit is toasted and caramelized.
  5. Remove from the oven and set aside the sliced grapefruit wedges for garnish. Squeeze the grapefruit halves into a cocktail shaker to extract the juice, which should measure about one cup.
  6. Add the lime juice, agave nectar, and tequila to the shaker. Then add ice and shake until well combined.
  7. On a small plate, combine coarse sea salt with dried rosemary. Moisten the rim of a glass and dip it in the salt mixture.
  8. Pour the margarita over ice and garnish with the broiled grapefruit wedges. Add a splash of sparkling water if desired.
