Broiled Grapefruit Sunset Margarita

Ingredients

  • 1.50 oz good quality tequila
  • 1 1/2 grapefruits
  • 2 tbsp brown sugar
  • 1 tbsp white sugar
  • 2 tbsp fresh lime juice
  • 1/2 tbsp agave nectar
  • Splash of sparkling water
  • Coarse salt and rosemary for rim garnish

Instructions

  1. Preheat the oven broiler.
  2. Slice one and a half grapefruits in half. Slice the remaining half into 1/2 inch slices and halve again to create wedges. Place all the grapefruit on a baking sheet.
  3. In a small bowl, mix the brown sugar and white sugar. Generously spread the sugar mixture on the grapefruit halves and slices.
  4. Place under the broiler for 8-10 minutes until the grapefruit is toasted and caramelized.
  5. Squeeze the grapefruit halves into a cocktail shaker, the juice should equal 1 cup. Mix in the lime juice, agave nectar, and tequila. Add ice and shake well.
  6. Combine coarse salt and dried rosemary on a small plate. Wet the rim of a glass and dip in the salt mixture.
  7. Pour the margarita over ice and garnish with the broiled grapefruit wedges. Add a splash of sparkling water if desired.
