Ingredients

  • 1.50 oz caster sugar
  • 2-3 strawberries, hulled and chopped
  • 6 oz rosé wine
  • 1.50 oz strawberry liqueur
  • 1.50 oz chilled soda water
  • Extra halved strawberries, for garnish

Instructions

  1. In a saucepan over medium heat, combine caster sugar and 1 cup water. Cook and stir for 5 minutes until the sugar is dissolved, then simmer for an additional 5 minutes. Set aside to cool completely.
  2. Blend the hulled and chopped strawberries in a blender until smooth. Strain the mixture into a large jug and stir in the cooled sugar syrup and rosé wine.
  3. Pour the mixture into a 2-cup-capacity metal container and freeze overnight.
  4. Once frozen, flake the mixture with a fork to form large ice crystals.
  5. In a separate jug, combine the strawberry liqueur and soda water. Divide the mixture among serving glasses and top with the frozen rosé. Garnish with extra strawberries and serve immediately.
