Ingredients
- 1.50 oz caster sugar
- 2-3 strawberries, hulled and chopped
- 6 oz rosé wine
- 1.50 oz strawberry liqueur
- 1.50 oz chilled soda water
- Extra halved strawberries, for garnish
Instructions
- In a saucepan over medium heat, combine caster sugar and 1 cup water. Cook and stir for 5 minutes until the sugar is dissolved, then simmer for an additional 5 minutes. Set aside to cool completely.
- Blend the hulled and chopped strawberries in a blender until smooth. Strain the mixture into a large jug and stir in the cooled sugar syrup and rosé wine.
- Pour the mixture into a 2-cup-capacity metal container and freeze overnight.
- Once frozen, flake the mixture with a fork to form large ice crystals.
- In a separate jug, combine the strawberry liqueur and soda water. Divide the mixture among serving glasses and top with the frozen rosé. Garnish with extra strawberries and serve immediately.
