Ingredients

  • 1 ripe peach, pitted and sliced
  • 1 tablespoon sugar
  • 1/2 teaspoon fresh lemon juice
  • 1/4 cup Prosecco or Champagne
  • 1 1/2 teaspoons elderflower liqueur, preferably St-Germain

Instructions

  1. In a blender, puree the ripe peach, sugar, and lemon juice until smooth.
  2. Strain the mixture through a fine sieve into a metal bowl.
  3. Freeze the puree until firm, for at least 6 hours.
  4. Scrape the frozen puree with a fork until fluffy and freeze until ready to use.
  5. Pour Prosecco or Champagne halfway into a Champagne flute.
  6. Add the elderflower liqueur to the glass.
  7. Top the cocktail with the peach granita just before serving.
  8. Serve immediately and enjoy!
