Ingredients
- 2 teaspoons baking stevia or sugar
- 1/4 cup water
- 1/2 heaping cup frozen blueberries
- 1 1/2 ounces white rum
- Handful of mint leaves
- 1/2 cup sparkling water, such as La Croix
- Ice
Instructions
- In a small to medium saucepan, combine baking stevia, 1/4 cup water, and the frozen blueberries.
- Bring the mixture to a boil, then reduce the heat and let it cook for 10 minutes, mashing the blueberries with a fork or spoon as it cooks.
- Once the blueberries are cooked down, transfer the contents to a blender and puree until smooth.
- Pour the blueberry simple syrup into a container and let it cool for a few hours or until ready to serve, or place it in the freezer for 10-15 minutes until cold but not frozen.
- When ready to serve, add a few mint leaves and 1 1/2 ounces of rum to a highball glass with ice.
- Pour 2 ounces of the blueberry simple syrup into the glass.
- Top with sparkling water and serve immediately.
- Garnish with mint and extra blueberries, if desired.
