Ingredients

  • 2 teaspoons baking stevia or sugar
  • 1/4 cup water
  • 1/2 heaping cup frozen blueberries
  • 1 1/2 ounces white rum
  • Handful of mint leaves
  • 1/2 cup sparkling water, such as La Croix
  • Ice

Instructions

  1. In a small to medium saucepan, combine baking stevia, 1/4 cup water, and the frozen blueberries.
  2. Bring the mixture to a boil, then reduce the heat and let it cook for 10 minutes, mashing the blueberries with a fork or spoon as it cooks.
  3. Once the blueberries are cooked down, transfer the contents to a blender and puree until smooth.
  4. Pour the blueberry simple syrup into a container and let it cool for a few hours or until ready to serve, or place it in the freezer for 10-15 minutes until cold but not frozen.
  5. When ready to serve, add a few mint leaves and 1 1/2 ounces of rum to a highball glass with ice.
  6. Pour 2 ounces of the blueberry simple syrup into the glass.
  7. Top with sparkling water and serve immediately.
  8. Garnish with mint and extra blueberries, if desired.
