Ingredients
- 1/2 cup pineapple juice
- 1/4 cup lemon juice
- 1/2 egg white
- 2 teaspoons syrup from cocktail cherries (or more if preferred), plus cherries to serve
- a few drops almond extract
Instructions
- Combine pineapple juice, lemon juice, egg white, cherry syrup, and almond extract in a blender.
- Blend the mixture at high speed until it becomes pale and starts to increase in volume.
- If preferred, add a few handfuls of ice and pulse twice more to chill the mixture.
- Alternatively, stir in the ice until the outside of the jug feels cold.
- Pour the mocktail into a glass and garnish with cherries to serve.
