Ingredients

  • 1 oz. fresh pineapple juice
  • 1 oz. Amontillado sherry (preferably Lustau)
  • 1 oz. rye whiskey
  • 3/4 oz. fresh lemon juice
  • 3/4 oz. simple syrup (1:1)
  • 1 dash Angostura bitters
  • 1 oz. chilled club soda
  • Lemon wheel (for serving)

Instructions

  1. In a cocktail shaker filled with ice, combine fresh pineapple juice, Amontillado sherry, rye whiskey, fresh lemon juice, simple syrup, and a dash of Angostura bitters.
  2. Shake the ingredients until well chilled, for approximately 7 seconds.
  3. Place ice in a Collins or highball glass and pour chilled club soda over it.
  4. Strain the cocktail from the shaker into the glass.
  5. Garnish with a lemon wheel.
