Ingredients
- 2 oz water
- 1.50 tbsp caster sugar
- 3-inch long piece fresh ginger, peeled, thinly sliced
- 1 lemon, peeled with vegetable peeler, juiced
- Pinch of sea salt
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 2 oz dark rum
- Ice cubes
- 5-6 fresh mint leaves
Instructions
- In a medium saucepan, combine water, sugar, ginger, lemon peel and juice, and salt. Bring to a boil, then simmer for 5 minutes until the syrup thickens slightly and is infused with ginger and lemon. Set aside to cool, then strain the syrup into a small bowl and discard the solids. The syrup can be refrigerated for up to 1 week.
- In a blender, combine the berries, rum, and 1/4 cup of ginger syrup; blend on high speed for 15 seconds until well blended.
- Fill a glass halfway with ice, pour the berry mixture, add mint leaves, and stir well. Serve immediately.
