Ingredients

  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 3 inches long piece fresh ginger, peeled, thinly sliced
  • 1 lemon, peeled with vegetable peeler, juiced
  • Pinch of sea salt
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh blueberries
  • 2 fl oz dark rum
  • Ice cubes
  • Handful of fresh mint leaves

Instructions

  1. In a medium saucepan, combine water, sugar, ginger, lemon peel and juice, and salt. Bring to a boil, then simmer for 5 minutes until the syrup thickens slightly and is infused with ginger and lemon. Set aside to cool and strain into a bowl, discarding the solids. The syrup can be refrigerated for up to 1 week.
  2. In a blender, mix the berries, rum, and 1/2 cup of ginger syrup until well blended.
  3. Fill a glass halfway with ice, add the berry mixture and mint, and stir well.
  4. Pour the cocktail into a glass and enjoy immediately.
