Ingredients

  • 2 oz bourbon whiskey
  • 2 oz apricot puree (recipe follows)
  • 1/4 oz lemon juice
  • 3 mint leaves, plus more for garnish
  • Apricot Puree:
  • 8 apricots, pitted
  • 2 Tbs lemon juice
  • 2 Tbs sugar

Instructions

  1. Prepare the apricot puree by blending pitted apricots, lemon juice, and sugar until smooth. Strain the mixture through a fine mesh sieve to remove the skins, then refrigerate until ready to use.
  2. In a cocktail shaker filled with ice, combine the bourbon, apricot puree, and lemon juice. Add torn mint leaves to the shaker by hand.
  3. Shake the mixture until well-chilled, then strain into a mason jar filled with ice.
  4. Garnish with a sprig of mint and serve.
