Ingredients

  • 3 oz Cava
  • 1.50 oz Vodka
  • 2.50 oz Lemon Sorbet
  • 2.50 oz Apple Juice
  • 0.04 oz Special Ingredients Lecithin Powder

Instructions

  1. Place the glass in the freezer for half an hour to create an icy appearance.
  2. In a bowl, mix the apple juice and lecithin with a hand blender to create a layer of foam, ensuring that air is mixed in by keeping a corner of the hand blender above the liquid.
  3. In a mixing bowl, combine the Cava, vodka, and lemon sorbet using a hand blender.
  4. If needed, use a long spoon to scoop the mixture into the glass, leaving about 1cm of space at the top.
  5. Gently spoon a dollop of the apple juice foam onto the cocktail, creating a nice high point of foam, and optionally garnish with a mint leaf.
