Aperitivo de Aatxe (Spanish Cava Delight)

This delightful Aperitivo de Aatxe is a sparkling Cava cocktail created by Morgan Schick for Aatxe restaurant in San Francisco. A delightful twist on the classic Champagne cocktail, this refreshing drink is made with cava (Spanish sparkling wine) and pacharán liqueur. Pacharán, akin to sloe gin, is derived from sloe berries, with a less sweet taste and often made with anise liqueur. This cocktail is a perfect choice for a relaxing evening or a celebratory gathering.
